A colorful, Vegan, and delicious Buddha Bowl to inspire your day, and help fill both the stomach and soul.

ingredients

1 cup cooked Lotus Foods Forbidden Rice

1/2 cup baby tomatoes, halved

1/2 cup radish, sliced

1/2 cup Brussels sprouts, halved and sauteed in Organic Liquid Coconut Oil

1/2 cup extra-firm tofu

handful pea shoots

1 Tbsp (+ extras for sauteeing Brussels sprouts) Organic Liquid Coconut Oil

pinch of Himalayan salt

instructions

1. Saute Brussels sprouts in Nutiva Organic Liquid Coconut Oil with Garlic. Set aside.


2. Cook Forbidden Rice according to package. Set aside.


3. In a large bowl, place cooked rice on the bottom.


4. Then, add Brussels sprouts, tomatoes, radish, pea shoots, and tofu.


5. Sprinkle with Himalayan salt.


6. Drizzle bowl with 1 Tbsp Nutiva Organic Liquid Coconut Oil with Garlic.


7. Serve, and enjoy!

But first, what exactly is a Buddha Bowl?

There are many different versions and definitions for what constitutes a Buddha Bowl, but the concept is still fully open to interpretation.

We love this definition,

At their core, Buddha bowls are about “balancing the different types of food that you eat,” and not eating too much of any one thing. (Source)

Essentially, a Buddha Bowl is filled with many different ingredients including colorful veggies (raw, roasted, and/or sauteed), a grain of some sort, a protein (originally started with Vegan proteins, but many are adding non-Vegan forms of protein now), greens, nuts, seeds, herbs, spices, and then, of course, a salad dressing or other sauce of choice (Click HERE to save this ingredients for later).


People love building Buddha Bowls and sharing them on Instagram. They are beautiful, quick, convenient, and generally touted as being packed full of nutrients.

And while there are thousands of Buddha Bowl combinations, we wanted to show you how to build a Buddha Bowl with a recent Buddha Bowl recipe we created.

The base to our Buddha Bowl was built from Lotus Foods Forbidden Rice. We then added Brussels sprouts (halved) which were sauteed in Nutiva Organic Liquid Coconut Oil with Garlic.

Next, we threw in some colorful, halved baby cherry red and yellow tomatoes, sliced radish, and extra-firm tofu.

Before putting on the finishing touches we added in a handful of pea shoots.

We sprinkled the Buddha Bowl with some Himalayan salt and then drizzled a tablespoon of the Organic Liquid Coconut Oil with Garlic on top.

We are well aware that you can make a special dressing or sauce for your Buddha Bowl, but why complicate things when an oil so simple and full of flavor will do the trick?
